Ingredients

  • 1 cup crushed Arrowroot Biscuits
  • 2 tbsp melted butter
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ¼ cup whipped topping

Method

  1. Step 1: The Blitz

Place your arrowroot biscuits into a food processor. Pulse in 3-second intervals. If you don't have a processor, place the biscuits in a zip-lock bag and roll over them with a rolling pin. Tip: Leave a few pea-sized chunks for an artisanal texture.

  2. Step 2: The Binding

Transfer the crumbs to a mixing bowl. Pour the melted butter over the crumbs slowly while stirring with a fork. You are looking for the consistency of wet sand—if you squeeze a handful, it should hold its shape without crumbling immediately.
  3. Step 3: The Press

Dump the mixture into a pie dish or springform pan. Use the bottom of a measuring cup to press the mixture firmly down and up the sides. Pro Tip: Pressing too hard can make the crust rock-hard; press just enough to compact it. Chill for 30 minutes before filling.
